Duck Egg Omelet

Sound gross to you? Can you tell the difference?
We were pleased at this find because my six year old has an intolerance to egg yolks, but it turns out he can handle duck eggs just fine. And while the yellow is a little larger (as is the whole egg) in the duck eggs, there really isn't a whole lot of difference.

He certainly didn't complain as he cleaned his plate!! We found these duck eggs at a local farm called 180 Degree Farm in Sharpsburg, GA. At 8 bucks a dozen, Eli is the only one that gets to eat them, but they last quite a while. And they are a great treat for a boy who was missing his omelets!

They also work great as a substitute for eggs in cakes and cookies. Actually, I have seen famous chefs of food network swear that duck eggs are why their cakes are better than the competition. Just remember, 1 chicken egg = 1 1/2 duck eggs.
