Food Allergies -- Tomatoes

What do you do when the little spaghetti lover in your life turns out to be allergic to tomatoes? Well, you can completely despair of ever having a happy child again, or you could try this recipe to make spaghetti sauce without tomatoes. I have to say that I was a bit skeptical when I saw the recipe, but I made it with the hope that it would turn out to be something Eli would eat. Boy was I surprised!! Eli went happily through it and asked for more. I tried something like it for ketchup -- but I'm still working on that one. I'll let you know when I get it right!

Of course Eli is allergic to gluten as well, so his noodles are rice noodles purchased at the local Oriental Market. Their rice noodles cook up really well, and they are much better priced than rice noodles in the grocery store.

No Tomato Pasta Sauce

1 cup cooked carrots
1/4 cup cooked beets
1/4 cup water
3 T lemon juice (or vinegar)
1 T corn syrup, rice syrup, or agave syrup
1/2 t salt
3/4 t onion powder
1/4 t. oregano

Blend all the ingredients in the blender until smooth. Pour over pasta and meatballs, or store in the refrigerator.
