Now, if you didn't start your kids off on the healthiest plan, do not go to them with a snack and say, "Here, try this. This is healthy!" Instead say, "How about a popsicle?!" No fanfare, no gimmicks. Offer it to them like any other snack.
I came up with this recipe while trying to get Eli to eat more raw walnuts. Walnuts have great nutrients in them, including those oh-so-important Omega nutrients to help the development of healthy brains. He would eat a couple walnuts, but they weren't his favorite. As you can see from the photo, he likes them in this form just fine.

For these pops, you will need a good, high-powered blender so that they don't turn out grainy. We have a Vitamix blender (thank God for Christmas money!!), and if you can save up for one -- I highly recommend it!! An oster fusion works as well.
Easy Banana Pops
2 Ripe bananas
1/2 cup raw walnuts
1/2 cup apple juice (100 percent juice)
Place all ingredients in the blender and blend on high until a pinch between your fingers is not grainy. One minute is plenty in a Vitamix. May take up to 5 minutes in another blender. Pour into popsicle molds and freeze overnight. When ready to serve, run the plastic mold under warm water until the popsicle slide out easily (30 seconds, or so). Enjoy!!
These popsicles are easy, and they have a nice, creamy texture. Plus, the bananas and juice gives them all the sweetness they need. If you have a really good blender, you can throw in a carrot as well. They blend in nicely, and I bet your child won't even know the extra nutrients are in there!
